Cola makes the perfect sticky glaze for rich, fatty meat like pork ribs – and simmering with fresh puréed cherries brings a fruity summer twist. Serve with a summery slaw and potato wedges for a lip-smacking feast for two.

Ingredients

  • No.1 Slow Cooked Hickory Smoked Pork Short Ribs
  • 200ml cola
  • 180g cherries, pitted
  • 2 tsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 2 tsp Dijon mustard
  • ½ tsp tabasco

Method

  1. Preheat the oven to 200ºC, gas mark 6 and cook the ribs according to pack instructions, ignoring the glaze step (reserve the glaze for another recipe).

  2. Meanwhile, put the remaining ingredients in a pan and simmer for 10-20 minutes until the cola has reduced by about a third and the cherries are soft. Remove from the heat and use a hand blender to whizz until smooth, then season. There should be about 125g of glaze – if you have more or the glaze is still too liquid, return to the heat and gently simmer until thickened.

  3. Once the ribs have had 35 minutes in the oven, pour over the glaze and return to the oven for a further 5 minutes. Serve with a summery slaw and potato wedges, if liked.
