Ingredients
- 200g pack cavolo nero, stems removed
- 2 unwaxed lemons
- 250g pack Merchant Gourmet Persian-Style Rice & Lentils
- 1 pack/s 2 Roast Chicken Breast Fillets, skinned
- 2 Essential Pears, cored and thinly sliced
- 75g feta, crumbled
- 50g pack smoky spiced snack mix or roasted salted almonds, roughly chopped
- Extra virgin olive oil, to drizzle
Method
Roughly chop the cavolo nero leaves. Put into a large bowl with the zest and juice of 1 lemon and a good pinch of sea salt flakes. Scrunch well with your hands, then set aside for 2 minutes
Heat the grains according to pack instructions, tip into the cavolo nero while hot, stir together well, then leave to cool a little.
Cut the chicken into small chunks and tumble into the salad with the pears, 60g cheese and most of the snack mix or nuts.
Top with the remaining nuts and cheese, the zest from the second lemon, then cut it into wedges for squeezing. Give each bowl a good drizzle of extra virgin olive oil, then serve.
Cook’s tip
If you can’t find the smoky snack mix, add a pinch of smoked paprika to the salted almonds as you chop.
