Corn on the cob with furikake butter

Ingredients
- 4 sweetcorn cobs (or 2 whole corn, husks discarded, halved)
- 80g unsalted butter, softened
- 50g jar Clearspring Organic Furikake
- Parmigiano Reggiano, finely grated
- 1 unwaxed lemon, zest
- ¼ x 20g pack chives, finely chopped
Method
Boil the corn in salted water for 7 minutes, or until tender. In a small blender or bowl, add the butter and all but a pinch of the furikake, then blend or beat until smooth.
Once cooked, drain the corn and serve topped with two-thirds of the furikake butter. Sprinkle with the parmesan, lemon zest, chives and the remaining furikake.
Cook’s tip
The butter makes more than you need and is great on noodles or pasta. If you forget to take it out of the fridge, grate it before adding it to the blender to help soften it.
