Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 2 clove/s cloves garlic, sliced
  • 200g Essential Kale, roughly chopped, tough stems discarded
  • 240g Merchant Gourmet 5 Bean Medley
  • 4 tbsp single cream
  • 30g Italian vegetarian hard cheese, finely grated
  • 3 slice/s No.1 Spelt Sourdough, toasted

Method

  1. Heat the oil in a large frying pan over a medium-high heat. Fry the onion, garlic and a pinch of salt for 8-10 minutes, until everything is turning golden.

  2. Meanwhile, bring a large pan of salted water to the boil. Add the kale and cook for 1 minute. Drain in a colander and shake dry. Tip into the frying pan with the onion and fry for a further 2-3 minutes.

  3. Add the beans, cream, most of the cheese and 4 tbsp water to the pan; stir over the heat until warmed through, then season. Pile onto the toasted sourdough and scatter with the remaining cheese, plus some chilli flakes and unwaxed lemon zest, if liked.
