Heat the oil in a large frying pan over a medium-high heat. Fry the onion, garlic and a pinch of salt for 8-10 minutes, until everything is turning golden.
Meanwhile, bring a large pan of salted water to the boil. Add the kale and cook for 1 minute. Drain in a colander and shake dry. Tip into the frying pan with the onion and fry for a further 2-3 minutes.
Add the beans, cream, most of the cheese and 4 tbsp water to the pan; stir over the heat until warmed through, then season. Pile onto the toasted sourdough and scatter with the remaining cheese, plus some chilli flakes and unwaxed lemon zest, if liked.
