We’ve turned everyone’s favourite summer dessert into an ice cream. Fresh or frozen berries both work well.

    Ingredients

    For the ice cream base

    • 450ml double cream
    • 450ml whole milk
    • 6 large egg yolks
    • 75g caster sugar
    • 1 tsp vanilla bean paste

    For the meringue

    • 1 large egg white
    • squeeze of lemon juice
    • 3 tbsp caster sugar

    For the berry ripple

    • 150g fresh or frozen berries
    • 1 tbsp 1-2 tbsp caster sugar
    • ½ lemon, zest and 1 tbsp juice
