Ingredients

  • 450g jar pitted green olives in brine
  • ½ tbsp juniper berries
  • 1 tbsp coriander seeds
  • 1 tbsp peppercorns
  • 1 large unwaxed lemon, thinly sliced
  • 8 sprig/s lemon thyme
  • 200ml dry gin

Method

  1. Sterilise 4 x 400ml jars (see instructions at waitrose.com/howtosterilise jars). Drain the olives over a jug, reserving the brine. Heat a pan over a medium heat and toast the spices for 3 minutes. Divide the olives and spices between your jars, then push in the lemon slices and thyme sprigs.

  2. Top up each jar with 50ml of the gin and some of the brine. Tightly screw on the lids and leave for at least 1 hour. The olives will keep in the fridge for 3-5 days. Serve with cocktail sticks to avoid eating the whole aromatics.
