Gammon, cheese & pickle buns

Ingredients

  • 4 Kühne Gourmet Selection Gherkins with Honey, sliced lengthways, plus 2 tbsp juice
  • 2 x 200g No.1 Unsmoked Gammon Steaks
  • 3 tbsp Stokes Original BBQ sauce, plus extra for brushing
  • 4 ciabatta rolls, halved
  • 4 slices Applewood Cheddar

For the cabbage slaw

  • ¼ red cabbage (about 125g), finely sliced
  • ¼ x 25g pack flat leaf parsley, leaves picked
  • 1 tbsp olive oil
  • 1 tbsp mustard mayonnaise, plus extra for spreading
  • 1 clove/s garlic, finely grated

Method

  1. For the slaw, put the cabbage and parsley leaves in a large bowl; season. In a small bowl, whisk the remaining slaw ingredients with the 2 tbsp gherkin juice. Add to the cabbage and set aside. Cut each gammon steak into four and brush all over with the BBQ sauce. Leave to marinate while you light the barbecue.

  2. Fire up the barbecue and wait for the coals to have a thin layer of grey ash. Lay the gammon steaks on the centre of the barbecue and cook for 1-2 minutes on each side until there is no pink meat and the juices run clear. Take off the grill and brush with a little more BBQ sauce.

  3. Meanwhile, lay the ciabatta rolls cut-side-down on the cooler part of the grill, around the edges of the barbecue. Watch them as they can easily burn. Brush the cut sides of the rolls with mustard mayo, then fill with a layer of slaw, followed by the gammon, a slice of cheese and the sliced gherkins.
