Bursting with mint and ginger, this refreshing cocktail emits a brilliant glow from the golden ale and rum.

Add the mint leaves, sugar syrup and lemon juice to a large glass and muddle lightly. Add the golden rum and crushed ice. Stir and add the golden ale and top up with ginger beer. Stir and garnish with mint.
Sugar syrup: Bring 250ml water and 250g caster sugar to the boil. Turn off the heat and cool.
