  • 8 fresh mint leaves
  • 5ml sugar syrup
  • 5ml lemon juice
  • 25ml golden rum
  • 125ml golden ale
  • 125ml ginger beer


  1. Add the mint leaves, sugar syrup and lemon juice to a large glass and muddle lightly. Add the golden rum and crushed ice. Stir and add the golden ale and top up with ginger beer. Stir and garnish with mint.

Cook’s tip

Sugar syrup: Bring 250ml water and 250g caster sugar to the boil. Turn off the heat and cool.
