Preheat the grill to high. Put the butter into a bowl with the honey and beat together with an electric mixer until pale. Taste and add more honey if you like.
Pick the leaves from the lemon thyme, combine in a small bowl with the salt, then rub together to release the lemony scent.
Split the buns, put onto a baking sheet and toast the cut sides under the hot grill until golden.
Spread with some honey butter (about 80g for 4 buns), scatter with the lemon thyme salt and serve hot.
Whipped honey butter can be kept in the fridge in a sealed container for up to 1 week. Add a pinch of salt and a sprinkle of cinnamon to serve over pancakes or waffles, or a dash of chilli sauce for a savoury hot honey butter to brush over meat, fish or tofu.
