Place the couscous in a bowl and pour over 225ml boiling water, cover with clingfilm and leave for 5 minutes. Fluff with a fork.
Heat the oil in a pan and fry the vegetables for 3-4 minutes, add the lentils and cook for 2 minutes.
Stir in the couscous, season and sprinkle with chopped parsley.
