Mango & lime cheesecake breakfast pots

Ingredients
- 160g frozen Essential Mango Chunks
- ½ x 300g tub Essential Natural Cottage Cheese
- 1 unwaxed lime, zest and juice
- Squeeze of honey, to taste
- 100g Waitrose Simply Granola
Method
Put the frozen mango and cottage cheese into a blender. Add the lime zest and 3 tbsp water. Blend until smooth, adding a little more water if the mixture gets stuck or won’t blend.
Taste, then blend in enough honey to sweeten, remembering that the granola is sweet, too.
Divide half the granola between 2 x 250-300ml clean jam jars, then squeeze over some lime juice. Top each with a quarter of the mango and cottage cheese mix, repeat the layers, then finish with the granola.
Serve immediately, or seal the jars and chill for a few hours or overnight.
Cook’s tip
This can be made with fresh mango too, but I use frozen as it’s so handy.
