Ingredients

  • 3 cardamom pods (approx. 2-3), seeds only
  • 250g frozen mango
  • 150g Yeo Valley Organic Natural Yogurt
  • ½ lime, juice
  • ½ tsp fresh root ginger, grated
  • 3 mint leaves (approx. 2-3), shredded, plus extra to serve

Method

  1. Grind the cardamom seeds to a fine powder using a pestle and mortar or the back of a teaspoon. Put the mango, yogurt, lime juice, ginger, cardamom powder and shredded mint in a blender and whizz until smooth. Loosen with about 100-200ml water if you prefer a thinner mixture. Pour into 2 glasses and top with the extra mint.
