‘Meat and three’ hot links & pickles

Ingredients

  • 3 Cooks’ Ingredients Red Chilli
  • 2 tsp caster sugar
  • 40ml white wine vinegar
  • 400g pack No.1 British Pork & Wagyu Beef Hot Links
  • 400g pack macaroni cheese
  • ½ x 280g tub Ottolenghi Hibiscus Pickled Onions, drained
  • 20 slice/s Mrs Elwood’s Burger Gherkins, drained
  • 300g pot Essential Coleslaw
  • Condiments such as mustard, barbecue sauce, ketchup or hot sauce, to serve (optional)

Method

  1. Slice the chillies into thin rounds, keeping the seeds in for heat if you like. Place in a small heatproof bowl, add the sugar and a small pinch of salt, then mix well to coat. Pour in 20ml just-boiled water and stir. When most of the sugar has dissolved, add the vinegar, mix well, then set aside.

  2. Preheat the oven to 200°C, gas mark 6. Line a small roasting tray with baking parchment and add the sausages. Bake for 25 minutes, turning halfway, until piping hot throughout and the juices run clear.

  3. Put the macaroni cheese into the oven at the same time as the sausages and cook according to pack instructions.

  4. Divide the pickled onions and burger gherkins between 4 plates, separate the sausages, then serve with the macaroni cheese and coleslaw alongside, condiments of your choice and slices of soft, thick white bread, if you like.
