Ingredients

  • 1 mince pie
  • ½ blush orange (scrubbed), zest and fruit
  • 2 scoops No.1 Belgian Dark Chocolate & Sour Cherry Ice Cream
  • 1 tbsp roughly chopped roasted salted almonds
  • 25ml Irish cream liqueur (or your liqueur of choice)

Method

  1. Warm the mince pie in the microwave (removing the foil case) or a low oven.

  2. When ready to eat, remove the peel and pith from the zested ½ orange and roughly chop. Layer up a sundae glass, starting with some crumbled mince pie and orange zest, followed by a scoop of ice cream, more zest, the chopped orange and nuts, then more mince pie. Repeat, reserving some zest. Drizzle with the liqueur and scatter with the remaining zest to serve.

Cook’s tip

LEVEL UP

If you have clotted cream ice cream, try one scoop of that and one of the chocolate for more of a flavour contrast.
