Ingredients

  • 80g soft cheese
  • ½ large orange (scrubbed), zest
  • ½ tbsp icing sugar, plus extra for dusting (optional)
  • 4 slice/s brioche loaf
  • 100g mincemeat
  • 25g salted butter, softened

Method

  1. In a large bowl, use a spoon to beat together the soft cheese, orange zest and icing sugar. Set a large, nonstick frying pan over a low-medium heat. Lay 2 slices of brioche on a board, then spread with the soft cheese mixture. Top with the mincemeat, then press the remaining brioche slices on top.

  2. Spread the tops with ½ of the butter, then put both sandwiches in the hot pan, butter-side down. Spread the tops with the remaining butter, cover with baking parchment and put a second clean frying pan on top with a couple of cans of beans or tomatoes in it to weigh it down. Cook for 1-1½ minutes until browned, then flip, put the parchment and weight on top again and cook for a further 1-1½ minutes until the bread is browned and the mincemeat is bubbling. Dust over a little icing sugar to serve, if liked.
