  • 500ml No.1 English Vintage Perry
  • 50ml spiced dark rum
  • 75ml ginger cordial
  • 200ml water
  • 3 cinnamon sticks
  • 4 star anise
  • 3 clementines, sliced


  1. Put all the ingredients apart from a few clementine slices in a medium saucepan and heat until simmering, but not boiling. Reduce the heat and warm gently for 5 minutes.

  2. Add the remaining clementine slices to garnish and serve warm.
