Preheat the oven to 180ºC, gas mark 4. Toss the nectarines with the lemon juice, vanilla and 75g of the sugar; spread over a deep ovenproof dish (about 25x30cm).
In a large bowl, use your fingertips to rub together the butter and flour until you have a soft, breadcrumb-like texture with lots of chunky clumps. Stir in the remaining 65g sugar and the granola. Sprinkle the mixture over the nectarines, then bake for 30-35 minutes. Leave to stand for 10 minutes before serving with double cream or ice cream, if liked.
For a flavour twist, swap the lemon juice for the juice of 1 large orange. The vanilla can be replaced with 1 tsp orange blossom water, too.
