Ingredients
- 800g Maris Piper potatoes, cut into roughly 4cm chunks
- 1 onion, sliced
- ½ tsp salt
- 3 tbsp olive oil
- 4 tsp Bart Sweet Smoked Paprika
- 1 tsp clear honey
- 1 tbsp white wine vinegar
- 2 clove/s garlic, crushed
- 8 No.1 British Free Range Pork Sausages
- 200g pack baby leaf greens, thick stems discarded
Method
Heat the oven to 220ºC/200ºC fan/gas 7. Line a large roasting tin with baking parchment. Add the potatoes, onion, salt and 2 tbsp oil, toss together and roast for 15 minutes. Meanwhile, in a small bowl mix the remaining 1 tbsp oil, the paprika, honey, vinegar and garlic.
After 15 minutes, stir the potatoes and nestle in the sausages. Roast for another 15 minutes. Meanwhile, roughly slice the greens.
Push the sausages to one side, stir the greens through the potatoes, then turn the sausages and put back on top. Pour the paprika oil over everything, season and roast for another 15-18 minutes until the sausages are golden with no pink meat remaining and the potatoes are tender.
