Pea & paneer tikka masala
A quick veggie tikka masala that is so easy to make thanks to a tasty pre-made sauce. Paneer and peas are a match made in curry heaven, combining creamy and sweet flavours in a rich, gently spiced masala sauce that's perfect for busy weeknights. Spoon into more curry recipes.

Ingredients
- 200g pack Lancashire Farm Authentic Paneer Soft Cheese
- 2 tsp sunflower or vegetable oil
- 1 small onion, finely sliced
- 250g pack Holy Cow! Delhi Tikka Masala Curry Sauce
- 200g frozen peas
- steamed basmati rice, natural yogurt, coriander & finely chopped red onion (optional), to serve
Method
Preheat the oven to 200ºC, gas mark 6. If you have time, soak the paneer in warm water for 10 minutes, then pat dry with kitchen paper. Cut into 2cm cubes and toss in a medium baking dish with sunflower or vegetable oil and the sliced onion, then season. Roast for 15 minutes, stirring halfway.
Carefully stir the curry sauce, frozen peas and 100ml hot water into the dish. Return to the oven for 10-12 minutes until everything is piping hot, then season
Serve the pea and paneer curry with steamed basmati rice, plus some natural yogurt and coriander, if you like. Some finely chopped red onion goes well scattered on top, too.
