Ingredients

  • 6 British pork pigs in blankets
  • 2 tbsp HP or brown sauce, plus extra to serve
  • 2 milk buns, split
  • 3 large free range eggs
  • 15g salted butter
  • ½ x 20g pack chives, finely chopped
  • 2 slices Monterey Jack or Cheddar (from the sliced pack)
  • 2 tbsp caramelised red onion chutney

Method

  1. Preheat the oven to 200°C/180°C fan/gas 6. Put the pigs in blankets into a bowl with the HP sauce and toss to coat. Spread over a baking tray and cook for 15-20 minutes, until cooked through and caramelised on the outside. Add the milk buns, cut-sides up, for the final five minutes.

  2. Meanwhile, crack the eggs into a nonstick frying pan off the heat with a splash of water, then use a wooden spoon to mix until combined. Season, then cook over a medium heat, stirring continuously. Once the curds begin to set, drop in the butter and continue to cook, stirring vigorously, turning the heat off once the eggs are nearly cooked. Create 2 rough rounds, then place a slice of cheese on top of each – the residual heat will help this melt.

  3. Spread the bases of the toasted milk buns with the onion chutney, then add the pigs in blankets with a squeeze of brown sauce, the eggs and chives. Serve immediately – with napkins at the ready!
