Poached chicken, pak choi & noodles
This super quick and healthy dish is perfect for a mid-week dinner with no fuss. It's tasty, healthy and packed with flavour, and leaves you feeling clean and detoxed after eating it!

Ingredients
300g pack 2 chicken breast fillets, cut into thick strips
400ml Cooks’ Ingredients Chicken Stock
235g green pak choi, sliced
1 red pepper, deseeded and sliced
2 x 150g packs Amoy Straight To Wok Ribbon Rice Noodles
2 tbsp light soy sauce (approx. 1-2 tbsp)
Method
Place the chicken and stock in a large saucepan and bring to the boil, cover and cook for 5 minutes. Stir in the white parts of the pak choi and the pepper, cover and cook for 3 minutes.
Add the noodles, soy sauce and green parts of the pak choi and cook for 2 minutes until the chicken is cooked throughout, the juices run clear and there is no pink meat.
