Pork koftas with chilli spelt
This quick and easy kofta dish is perfect for a mid-week dinner and makes great leftovers too. The chilli spelt is packed with flavour and complements the fragrant pork koftas perfectly.

- 1 echalion shallot, roughly chopped
- 1 red pepper, roughly chopped
- 500g pack essential Waitrose British Pork Mince
- 1 tsp ground cumin
- 100g frozen sweetcorn
- 150g frozen soya beans
- 115g pack baby spinach
- 250g pouch Jamie Oliver Sensational Sweet Chilli Spelt
Place the shallot and pepper in a small food processor and finely chop. Mix into the mince with the cumin and season. Divide into 8 and roll into sausage shapes about 12cm long. Place on a rack over a foil lined tray under a preheated grill for 12-15 minutes, turn until cooked through.
Meanwhile, cook the sweetcorn and soya beans in boiling water for 3-4 minutes, add the spinach to the water and cook until wilted, then drain.
Heat the spelt according to pack instructions and stir into the sweetcorn mix. Season and serve with the koftas.
