Prawn & aubergine tagine with couscous

A deep and richly flavoured tagine, with the warmth of the harissa taking the prawns and aubergines to a new level. The giant couscous works particularly well here and the dish is great for leftovers too!

    Ingredients

    • 1 tbsp olive oil
    • 1 aubergine, diced
    • 1 carrot, diced
    • 1 onion, diced
    • 2 tsp harissa paste
    • 50g dates, sliced
    • 400g can chopped tomatoes
    • 150g raw king prawns
    • 100g Waitrose Love Life Giant Wholewheat Couscous

    Method

    1. Heat the oil in a large saucepan and fry the vegetables for 5 minutes. Add the harissa and cook for 1 minute. Stir in the dates and tomatoes, cover and simmer for 10 minutes until tender.

    2. Stir in the prawns and cook for 3-4 minutes.

    3. Meanwhile, cook the couscous in boiling water for 6 minutes, drain and serve with the tagine.
