Quick chicken, leek & spelt casserole

- ½ tbsp olive oil
- 330g essential Waitrose British Chicken Breast Chunks
- 2 leeks, sliced
- 1 red pepper, deseeded and sliced
- 75g Waitrose Love Life Pearled Spelt
- 300ml chicken stock
Heat the oil in a large saucepan and fry the chicken for 5 minutes. Add the leeks, pepper and spelt and cook for 3 minutes.
Stir in the stock, cover and simmer for 15-20 minutes until the chicken is cooked throughout, there is no pink meat and the juices run clear, and the spelt is tender.
