A daiquiri is usually a concentrated drink of rum, sugar and lime. This version blends it with soft, juicy watermelon to make a longer serve for even longer afternoons in the sun.

300ml white rum
600g watermelon fingers
60ml agave nectar
60ml fresh lime juice
10 ice cubes
Mint sprig, to garnish
Fresh watermelon, sliced

Add the rum, watermelon, agave nectar, lime juice and ice to a blender and blend to a slushie consistency.
Pour into a jug, stir well, garnish with mint and serve with a slice of fresh watermelon.
