Ingredients

  • 1 tbsp oil, plus extra for greasing
  • 454g pack Essential British Pork Sausages
  • 2 onions, sliced
  • 1 red pepper, deseeded and sliced
  • 400g can Essential Cannellini Beans, drained and rinsed
  • 1kg Essential Potatoes, peeled and thinly sliced
  • 300ml chicken stock, hot

Method

  1. Preheat the oven to 200°C, gas mark 6. Heat half the oil in a large frying pan and fry the sausages for 5 minutes to brown, remove and set aside. Add the remaining oil to the pan and fry the onion and pepper for 4-5 minutes.

  2. Meanwhile, slice the sausages (optional). Add the beans and the sausages to the pan and cook for 2 minutes, then season.

  3. Place 1/3 of the potatoes in the base of a greased casserole dish, then top with half the sausage mixture. Add another 1/3 of the potatoes in an even layer, then add the remaining sausage mixture. Add the remaining potatoes, then pour over the stock, cover and bake for 1 hour. Remove the lid and cook for a further 30 minutes until the potatoes are golden and tender.

Cook’s tip

To freeze ahead, cook as above, then allow to cool completely. Transfer to a freezer-proof container, cover and freeze. To reheat, defrost fully and bake for 45 minutes.
