Self-saucing apple butterscotch pudding

Ingredients

  • 2 Bramley Cooking Apples, peeled and thinly sliced
  • 200g plain flour
  • 110g caster sugar
  • 2 tsp baking powder
  • tsp ground cinnamon
  • ½ tsp salt
  • 150ml milk
  • 2 medium free range eggs
  • 75g unsalted butter, melted

For the sauce

  • 175g dark brown soft sugar
  • 3 tbsp golden syrup
  • 1 tsp vanilla bean paste

Method

  1. Preheat the oven to 180°C, gas mark 4. Scatter the apples over the base of a 1.5-litre baking dish.

  2. In a small saucepan, make the sauce by heating the brown sugar, golden syrup, vanilla and 150ml water with a pinch of salt until the sugar has dissolved. Boil for a minute, then take off the heat.

  3. Whisk together the flour, sugar, baking powder, cinnamon and salt in a large mixing bowl. Add the milk, eggs and butter, then whisk together. Spoon evenly over the sliced apples and pour the hot sauce over the top. Bake for 35 minutes until golden with sauce bubbling up the sides. Let stand for 5 minutes before serving with cold cream, if liked.
