Shio koji salmon and greens

Ingredients

  • 260g pack 2 Scottish salmon fillets
  • 2 tsp Cooks’ Ingredients Vegan Shio Koji
  • 2 tbsp olive oil
  • 125g pack Tenderstem broccoli tips
  • 235g pack green pak choi, quartered lengthways
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp soy sauce
  • tsp chilli sauce

Method

  1. Put the salmon fillets on a plate and drizzle shio koji over them. Sprinkle the tops with a pinch of salt, then leave to rest for 15 minutes.

  2. Heat 1 tbsp oil in a pan and cook the salmon over a low heat for 4-6 minutes on each side, covering with a lid in between,

  3. Meanwhile, in another pan, heat the remaining 1 tbsp oil and add the broccoli, pak choi and 1 tbsp water. Cover and cook for 8 minutes.

  4. Add the salt and pepper, soy and chilli sauce and mix well. Serve the vegetables warm with the salmon. Delicious with brown rice
