Ingredients

  • 270g pack cherry vine tomatoes
  • 1 Essential Cucumber
  • 1 red onion
  • 185g pack Greek Conservolia & Kalamata olives with feta

Method

  1. Cut the tomatoes in ½ and add to a serving bowl. Cut the cucumber in ½ lengthways, scrape out the seeds with a teaspoon, then cut the flesh on the angle and add to the bowl. Tumble with ½ the onion, thinly sliced.

  2. Lift the feta from the pot of olives and set it aside. Tear the olives over the salad, add their herby dressing and toss well. Season and add a slosh more extra virgin olive oil, if liked, and let the flavours mingle a while.

  3. When ready to serve, scatter the salad with the feta, crumbled or in cubes.
