Slow-cooked lamb 'pilaf'

Ingredients

  • 770g pack slow-cooked lamb shoulder with garlic & herbs
  • 2 x 300g No.1 Jewelled Pilau Rice
  • 2 x 200g Tenderstem broccoli
  • 1 tbsp olive oil
  • 3 tbsp Ottolenghi Pipelchuma
  • 4 cloves garlic
  • 6 tbsp Greek-style natural yogurt
  • ¼ x 25g pack mint, leaves picked
  • ½ lemon, cut into wedges (optional)

Method

  1. Preheat the oven to 200ºC, gas mark 6, and cook the lamb according to pack instructions on the bottom shelf of the oven. When the lamb has had 25 minutes in the oven, remove the sleeve and lid from the rice, put on a baking tray and cook in the oven next to the lamb.

  2. Meanwhile, roughly chop the Tenderstem into 3-4cm lengths, put in a bowl and toss through the oil and 2 tbsp of the pipelchuma; season. Arrange on a baking tray with the garlic cloves, then put in the oven for the final 15 minutes of cooking time, turning the broccoli halfway through.

  3. In a small bowl, swirl the remaining 1 tbsp pipelchuma through the yogurt. When everything is cooked, use two forks to shred the lamb in its dish (discard the bone), then tip into a warm serving dish with the rice and broccoli. Squeeze the garlic out of their skins and toss everything together. Tear over the mint and serve with the lemon wedges for squeezing over, if liked, and the pipelchuma yogurt alongside.
