Spicy prawn noodles with salad onions & chives

These simple noodles have quite a flavour and chilli-heat punch. Serve them as part of a celebratory meal with other dishes, or enjoy as a speedy supper on its own (in which case a fried egg on top would go rather nicely). This serves 2 people on its own, or 4 with other dishes.

Ingredients

  • 3 tbsp light soy sauce
  • 2 tbsp Chinese rice vinegar
  • 2 tsp chilli oil (such as Lee Kum Kee Chiu Chow Chilli Oil), or to taste
  • 1 tsp toasted sesame oil
  • 1 tbsp vegetable or sunflower oil
  • 2 clove/s garlic, thinly sliced
  • 2 cm piece ginger, peeled and cut into matchsticks
  • 5 salad onions, cut into 2.5cm lengths
  • 150g pack Waitrose Duchy Organic Cooked King Prawns
  • 275g pack Lentil Noodles
  • 20g pack chives, finely sliced

Method

  1. In a small bowl, combine the soy, rice vinegar, chilli oil and sesame oil. Set aside.

  2. Heat the vegetable or sunflower oil in a wok or large frying pan over a high heat. Add the garlic, ginger and salad onions. Stir fry for 1 minute, until fragrant, then add the prawns and noodles and stir fry for 2-3 minutes more, until piping hot throughout.

  3. Pour in the soy and vinegar mixture. Cook for another minute, then remove from the heat, stir in the chives and serve immediately.
