    • 400g Waitrose Shallots, trimmed and halved
    • 3 garlic cloves, crushed
    • 30g fresh root ginger, grated
    • 2 star anise
    • 3 tbsp dark soy sauce
    • 500g fresh beef stock
    • 1 lime, juice
