Ingredients

  • ½ lemon, juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp clear honey
  • 1 tbsp Cooks’ Ingredients Sumac, plus extra for sprinkling
  • 227g pack No.1 Speciality Strawberries, hulled and quartered
  • ½ cucumber, deseeded and sliced into half moons
  • 300g peeled watermelon, cut into chunky dice
  • ½ x 25g pack mint, leaves thinly shredded
  • ½ x 330g pack No.1 Greek Barrel Aged Feta PDO, drained (optional)

Method

  1. In a large serving bowl, whisk together the lemon juice, extra virgin olive oil, honey and sumac with a pinch of sea salt and plenty of coarsely ground black pepper.

  2. Add the strawberries, cucumber and watermelon to the bowl, then gently toss to coat in the dressing.

  3. Stir through the mint and crumble over the feta, if liked. Finish with an extra sprinkle of sumac and serve immediately.
