Heat a large griddle pan or heavy-based frying pan over a high heat. Toss the broccoli spears with 1 tbsp oil and a good pinch of salt. Put in the hot pan and cook, turning often, until the ends are charred and the stalks just tender, then set aside. Wipe the pan clean.
Meanwhile, split the panini in half horizontally and spread each cut side with chilli jam. Divide half the cheese between the 4 bottom halves, then once the broccoli is cooked, lay it on top. Scatter over the remaining cheese, then top with the remaining panini halves.
Reduce the heat under the pan to medium, then drizzle in 1 tbsp oil. Put 2 of the assembled panini into the hot pan. Top with another heavy pan, or a lid weighted with a can of tomatoes, then cook for 5 minutes, until the base is crisp and toasted. Flip the panini, weigh down again and cook for a further 3 minutes. Repeat with the remaining oil and panini. Transfer to a board, cut in half and serve.
