Tiramisu-inspired breakfast pots
Alex Szrok loves a strong black coffee with his breakfast, so why not make it part of the actual meal? Channelling the indulgent flavours of tiramisu, his recipe is a little pick-me-up. Ingredients
- 100g soft prunes
- 100ml hot, strong black coffee
- 40g porridge oats
- 1 tsp Cooks’ Ingredients Madagascan Vanilla Extract
- 150g No.1 Natural Strained Greek Yogurt
- 2 tbsp Menier 100% Cocoa Powder
Method
Tear the prunes roughly in half and put into a small bowl. Add the hot coffee and the oats, then allow to sit for 15-20 minutes to absorb and cool. Mix the vanilla extract into the yogurt while you wait.
Divide half the prune and coffee mixture between 2 x 250-300ml clean jam jars, top each with a quarter of the vanilla yogurt and a dusting of cocoa powder, then repeat to make another layer in each jar. Finish with a final dusting of cocoa, then serve, or close the jars and chill for a few hours or overnight.
Cook’s tip
A little maple syrup or honey in the coffee is a welcome addition if you need more pep in your step. Roasted hazelnuts on top work a dream too.
