Tomato & cucumber salad with mint & whipped feta

Ingredients

  • 500g cherry tomatoes
  • ½ x cucumber
  • 1 tsp sea salt flakes
  • ½ x red onion, very finely chopped
  • 2 tbsp red wine vinegar
  • ½ x 145g pack Greek Kalamata olives
  • ½ x 25g pack mint, leaves picked
  • ½ x red chilli, deseeded and finely sliced
  • 4 tbsp extra virgin olive oil
  • 2 x 180g No.1 Whipped Feta Dip with Sunblush Tomatoes

Method

  1. Cut the cherry tomatoes into irregular shapes and put in a colander in the sink. Halve the cucumber lengthways, scoop out and discard the seeds, then finely slice into half-moons. Add to the colander along with the sea salt flakes, then toss everything together. Leave to drain for at least 10-15 minutes, stirring once or twice. Meanwhile, put the red onion into a large mixing bowl with the vinegar and a pinch of salt. Stir together, then set aside.

  2. While the onion is pickling, slice the olives and finely slice the mint leaves, then add to the mixing bowl with the sliced red chilli, oil and some freshly ground black pepper. Stir everything together, then add the drained tomatoes and cucumber. Mix again and season. Spoon the whipped feta and sunblush tomatoes into a serving bowl, using the back of a spoon to create a well in the centre, then pile the tomato salad into the middle. Spoon over any remaining dressing and serve straight away.
