Ingredients

  • 300g pack No.1 Red Choice Tomatoes
  • 430g pack Essential 2 Italian Mozzarella
  • 25g pack Cooks’ Ingredients Basil
  • Lavish pouring of Italian extra virgin olive oil

Method

  1. Bring the tomatoes to room temperature, then thinly slice. Drain, then slice the mozzarella. Pick the basil leaves.

  2. Overlap the tomato, cheese and basil leaves over a large serving plate, and season generously with sea salt flakes and freshly ground black pepper.

  3. Dress with a lavish pouring of extra virgin olive oil and serve.

Cook’s tip

Try swapping the mozzarella for 1 or 2 tubs of creamy No.1 Burrata instead. Put the burrata in the middle of the plate, surround it with the tomatoes and strew with basil leaves. Finish with oil and seasoning, then break open the cheese when you serve.
