MEAL MATHS - LAMB SAUSAGE ROLLS

Ready in 35-40 minutes | Serves 4

SCROLL DOWN TO ADD INGREDIENTS

1. Preheat the oven to 220°C, gas mark 7 and line a baking tray with parchment paper. Place the lamb burgers and panko breadcrumbs into a bowl and mix well.

2. Unroll the puff pastry sheet. Spread the lamb mixture just off centre, across the length, from end to end in a sausage shape, leaving a 2cm border from the edge of the pastry. Brush a little water over the border, then gently fold the other half of the pastry over the top, sealing firmly along the edges. Using a sharp knife, lightly score along the sealed edge, then slice into 4 evenly sized sausage rolls.

3. Bake on the prepared tray for 25-35 minutes, until the pastry is risen and golden and the meat cooked through. Dress the Greek side salads to serve alongside.
