Balsamic red cabbage and apples

Serves: 4, as a side
2 tbsp rapeseed oil
1 onion, thinly sliced
1 red cabbage, thinly sliced
4 royal gala apples, thinly sliced
100ml balsamic vinegar
200ml vegetable stock
1½ (one and a half) tbsp light soft brown sugar
1 tsp ground allspice
1.Heat the oil in a large pan then add the onion. Season and cook over a medium heat for 15-20 minutes, until soft and lightly coloured then add the rest of the ingredients and mix well. Cover and reduce the heat to low for 1 hour, stirring every 15 minutes to make sure it doesn't burn or stick to the pan.
2.Remove the lid and cook for a further 15-20 minutes until the liquid has reduced and you have a glossy mixture of cooked cabbage and apple. Season, adding more sugar, salt, pepper or vinegar if needed.
