8 slices Waitrose & Partners No.1 White Sourdough Bread
Butter, softened, for spreading
180g mature Cheddar, grated
200g Gruyère, grated
1 red chilli, deseeded and thinly sliced
1. Heat a large, heavy-based griddle or frying pan over a medium-low heat. Butter the bread on both sides.
2. Mix the cheeses together and divide between 4 of the slices of sourdough. Scatter over the sliced chilli then firmly press the remaining bread on top to make 4 sandwiches.
3. Cook the sandwiches in the hot pan (you may need to do this in 2 batches) for 4-5 minutes on each side until the sourdough is crunchy and golden and the cheese has melted. Cut in half and serve immediately.
