Cauliflower Cheese with Bacon
Ingredients

425ml milk

1 bay leaf

3 black peppercorns

35g butter

35g plain flour

85g gruyère

A pinch of English mustard

1 cauliflower

Method

Preheat oven to 220°C/gas mark 7.

Put 425ml milk in a pan with a bay leaf, 3 black peppercorns and 1/2 onion. Bring to the boil, then cover, remove from the heat and stand for 20 minutes.

Melt 35g butter in a pan, mix in 35g plain flour, cook for a minute, then stir in the strained milk. Simmer for 5 minutes, then add 85g gruyère and a pinch of English mustard. Season to taste.

Boil the florets of one cauliflower for 2-3 minutes, or until tender. Drain and arrange in a gratin dish. Sprinkle with sautéed, diced onion and bacon. Pour over the sauce and bake for 10 minutes.
