Lamb & mint koftas

Koftas are quick and simple to prepare. They’re great for either grilling or cooking on the barbecue. Try using minced beef, pork or turkey instead of lamb. If using wooden skewers, soak them in water first.
Serves: 4
½ x 25g pack Cooks’ Ingredients Mint, leaves only
400g pack Waitrose Duchy Organic Lamb Mince
250g pouch Waitrose Love Life Quinoa, Chickpeas, Bulgur Wheat & Rice
225g pack Waitrose Pome Dei Moro Tomatoes, halved
100g feta
50g Fragata Stoneless Manzanilla Olives Filled With Piquillo Peppers, halved
1 large sprig rosemary, leaves chopped
1 tbsp Greek Extra Virgin Olive Oil
Juice of ½ lemon
1. Chop half the mint leaves and mix with the lamb. Season well and divide into 8. Press each handful onto skewers moulding them into a 10cm-long sausage shape at one end.
2. Place on a grill rack under a preheated grill for 10-12 minutes, turning occasionally until cooked throughout with no pink meat and any juices run clear. Alternatively, cook on a griddle or barbecue.
3. Meanwhile, heat the grain pouch according to pack instructions. Mix with the tomatoes, feta, olives, rosemary and remaining chopped mint.
4. Whisk together the oil and lemon juice, season and toss into the salad. Serve with the koftas.
