New York-style loaded smoked salmon bagels

Serves: 2
100g soft cheese
1 tbsp roughly chopped dill, plus extra to garnish
1 tbsp capers, roughly chopped, plus extra to garnish
1 lemon, plus wedges to garnish
¼ red onion, thinly sliced
2 poppy seed or sesame bagels, halved
¼ cucumber, sliced
3 tomatoes, sliced
200g smoked salmon
½ x 60g pack Good4U Super Sprouts
1. Mix together the soft cheese, dill, capers, finely grated zest from the lemon and a good grind of black pepper. In a bowl, toss together the red onion and juice of ½ the lemon.
2. Toast the bagel halves and spread with the soft cheese mixture. Arrange the sliced cucumber and tomatoes on top, then layer up the slices of smoked salmon. Scatter the pickled red onion on top (discard the lemon juice), along with any extra dill leaves and capers.
3 Finish with a handful of super sprouts and serve immediately with lemon wedges for squeezing over.
