Pork, leek & apple traybake

Serves: 4
No.1 Free Range Pork Fillet, cut into 8-10 slices
3-4 cloves garlic, crushed
5 sage leaves, shredded
2 Golden Delicious apples, cored and cut into wedges
1 leek, sliced
3 parsnips, peeled and quartered lengthways
3 large carrots, peeled and cut into chunky slices
3-4 sprigs thyme, leaves only, plus extra to garnish
2 tsp olive oil
Wilted seasonal greens, to serve
Wholegrain mustard, to serve
1. Preheat the oven to 220ÂșC, gas mark 7 and line a large baking tray with parchment paper. Mix the pork with the garlic, sage and apples.
Set aside.
2. Place the sliced leek, parsnips and carrots on the prepared baking tray, sprinkle with the thyme leaves and drizzle with the oil. Bake
for 10-15 minutes, until starting to colour.
3. Toss the vegetables, then add the pork and apple mixture to the baking tray. Season, then return to the oven for a further 20 minutes, or until the pork is cooked through with no pink meat. Delicious served with wilted or steamed seasonal greens and wholegrain mustard.
