Sweet potato falafel pockets

192g pack Waitrose sweet potato falafels
2 essential Waitrose wholemeal pittas
6cm piece cucumber, thinly sliced
30g wild rocket leaves
60g essential Waitrose reduced-fat houmous
1. Arrange the falafels on a bakingsheet and cook in the oven at 200ºC, gas mark 6, for 10 minutes until warm. Add the pitta bread for the last 2 minutes.
2. Split open the pittas and fill with cucumber and rocket, then spoon over the houmous.
3. Pop the warmed falafels into the pittas and serve.
Rich in vitamin A, sweet potatoes count towards your 5 a day. Roasting in a little vegetable oil is a good way to improve absorption of this vitamin.
