150g Mini Watermelon, peeled and deseeded
70ml white tequila
35ml triple sec
20ml lime juice, plus extra and 2 wedges
Cooks’ Ingredients Himalayan Pink Salt (optional)
1. Whizz the watermelon in a blender and sieve into a jug to give 100ml juice. Discard the pulp.
2. Add the tequila, triple sec, lime juice and fresh watermelon juice back into the blender and add the ice.
3. Dip the rim of a cocktail glass in some lime juice and then into ground pink salt, if liked. Add the cocktail and decorate with a wedge of lime to squeeze over.
