Our Limited Edition Spring Blossom Raw Honey is produced in mainland Greece by artisan beekeeper Alexandros Gousiaris, who carefully tends his hives throughout the year and moves them seasonally so the bees can forage on abundance of native herbs and wildflowers. Harvested from March to June, the honey comes from hives that spend the winter in mild coastal regions before being moved inland following the first spring blossoms. As the season progresses, Alexandros may move the hives again to areas where wildflowers are in full bloom, giving the bees access to a wider variety of nectar. This creates a light golden honey with a delicate floral sweetness and a natural character that varies from year to year. Made in small batches, our raw honey is cold-extracted, unfiltered and unpasteurised to preserve its unique aroma and flavour. Each jar is individually numbered and marked with the year of harvest, reflecting its seasonal origin. Blossom nectar honey is naturally more fluid than honeydew and may crystallise over time — a normal sign of raw, minimally processed honey. Simply warm the jar gently if you prefer a more liquid texture.

Unfilterd & extracted below 40°C to ensure nutritional properties remain. Crystallisation is a sign of pure unprocessed honey caused by naturally occurring pollen & trace elements. To clear, place the jar in a bowl of warm water & the crystals will melt.
