To Prepare Half a Lobster 1. Place the lobster on a board belly side down with legs and tail out flat. 2. Using a large sharp knife cut the lobster in half starting from the head just behind the eyes and slice down to the tail. This will require firm pressure. 3. Remove the dark stomach sack from the head, behind the eyes, and the intestinal track (vein) from the tail meat. 4. Use the back of your knife, or a nut-cracker, to crack the claw open to extract the meat. Use a pick or skewer to remove the meat from the knuckles and the legs. 5. The greenish tomalley meat, and any red roe found in the head is edible too, and has excellent flavour for a sauce.
