Preheat the oven to 160ºC, gas mark 3. Grease and line a 900g loaf tin. Peel and core the pears. Thinly slice 1 and roughly dice the other 2.
Using an electric hand mixer, beat the butter, flour, ground almonds, 150g sugar, eggs and vanilla together for 2-3 minutes until smooth and creamy. Stir in the chopped pears, then spoon into the prepared cake tin.
Arrange the sliced pears on top, then sprinkle over the flaked almonds and remaining sugar.
Bake for 1 hour 15-20 minutes, or until risen and golden and a skewer inserted into the centre of the cake comes out clean. Leave to cool completely in the tin before slicing.
For a warming spice flavour, swap the vanilla extract for 2 tsp ground ginger.
