Apple and honey tart
Spelt flour gives this pastry a lovely crumbly texture while the cardamom adds a subtle hint of spice. There are different ways to decorate the tart if you have a mandolin and a little time, the apple flowers create a lovely effect.

Ingredients
- 2 cox or spartan apples, halved and cored
- ½ lemon, juiced
- 1 tbsp apricot jam, to glaze
- 1 tbsp Scottish heather honey, to glaze
For the pastry
- 1 cardamom pod
- 150g plain flour, plus extra for dusting
- 50g spelt flour
- 3 tbsp icing sugar
- 100g unsalted butter, cubed and chilled
- 1 egg yolk
For the honey frangipane
- 100g unsalted butter, softened
- 75g caster sugar
- 50g Scottish heather honey
- 2 eggs
- 100g ground almonds
- 2 tbsp plain flour
