Apple and honey tart

Spelt flour gives this pastry a lovely crumbly texture while the cardamom adds a subtle hint of spice. There are different ways to decorate the tart if you have a mandolin and a little time, the apple flowers create a lovely effect.

    • 2 cox or spartan apples, halved and cored
    • ½ lemon, juiced
    • 1 tbsp apricot jam, to glaze
    • 1 tbsp Scottish heather honey, to glaze

    For the pastry

    • 1 cardamom pod
    • 150g plain flour, plus extra for dusting
    • 50g spelt flour
    • 3 tbsp icing sugar
    • 100g unsalted butter, cubed and chilled
    • 1 egg yolk

    For the honey frangipane

    • 100g unsalted butter, softened
    • 75g caster sugar
    • 50g Scottish heather honey
    • 2 eggs
    • 100g ground almonds
    • 2 tbsp plain flour
